Homemade Taquitos and Guac

Oh...I was so industrious today even 6 days after surgery. Good thing the 5 year old can lift a crock pot.

Shredded the chicken and chopped all the veggies. Stewed them in a crock pot which I've found makes the chicken easier to shred vs. poaching them in a pan.
I didn't make the tortillas but I did use my amazing ones from whole foods.
And then I proceeded to heat the oil up and on my first batch oil popped out into my eye and I was down for about 15 min rubbing oil from it hoping I wasn't blind.
Then I found my rythm... use a lid for cover.... use the tongs and toothpick in conjunction to rotate. Easy Peasy.

Out of 29-30 of them, Nathan and I were lucky to get one. It's a keeper and it has everything to do with the right tortilla tasting yummy and compact rolling.

Then the guac.... with that yummy mexican cheese and pico and lime... sigh.

On top of all that we gardened and developed our Allowance Contract for Unit 1. I'm beat!
