Semi healthy cupcakes!

OK.. I've seen this recipe online somewhere a year ago and now can't find it... so I'm posting my own.

With Sydney in Montessori, they have a strict policy on no bad stuff for birthday's! Imagine a school birthday party with NO cupcakes??!! So I found this recipe. I'll add my search words here: healthy cupcakes, no-egg cupcakes, easy healthy cupcakes, pumpkin chocolate cupcakes, vegan cupcakes.

1 box of cake mix (I used Devils Food)
1 can of pumpkin (16 oz)
about 1/3 c of water.

Mix.

Bake for 20 min at 350 degrees.

They come out very bumpy and very moist. You can put icing on top. I took them to school 2 years in a row and have not had a problem yet! Last year I took powdered sugar and sprinkled it on. This year I wasn't that ambitious. Kids should feel lucky they got anything!

I have a recipe for healthy cupcakes that used one grated fresh apple instead of oil. It is wonderful!
